This is the second in a series of recipes that make ONE decadent treat. Only one. How much damage can one do, after all? No need for actual willpower; the recipe takes care of that annoying nuisance.
The really good thing about this chocolate cupcake is it takes two minutes to make. And it’s only 100 calories, so you can indulge guilt-free.
After you make it one time, you’ll figure out just exactly which of your cups to use. It rises up about double, so you be the judge.
1 TBSP whole wheat flour
1 TBSP sugar
1 TBSP unsweetened cocoa
a pinch of baking soda
a pinch of salt
1 TBSP yogurt (or more if the mixture seems too dry). I used plain and my cupcake was very chocolatey, but not very sweet. You can experiment.
Mix all ingredients in a mug. Microwave on high for a minute. Check if it’s done, and microwave a few more seconds if it’s not. It’ll be hot when it comes out of the microwave, so that’s a perfect time to add a teeny tiny scoop of ice cream.
