Just One Chocolate Cupcake

I’ve found quite a few recipes for cupcakes made in the microwave, and they’re okay, especially if you’re in a hurry for something sweet. But, they’re not in the same class as a real cupcake.

One Chocolate Cupcake


1 tablespoon egg white
1 tablespoon white sugar
2 tablespoons butter, melted
1/4 teaspoon vanilla essence
2 tablespoons all-purpose white flour
1/4 teaspoon baking powder
1 tablespoon cocoa powder
1 tablespoon chocolate, finely chopped
pinch of salt
1 tablespoon milk


Preheat the oven to 350°F and line a muffin pan with 1 liner.

Beat the egg white until soft peaks form then gently stir in the sugar, melted butter and vanilla.

Fold in the flour, baking powder, salt, cocoa powder and chocolate and gently stir until smooth.

Pour in the milk and gently stir until fully incorporated.

Bake for 8-12 minutes, or until the cake is fully set. Let cool completely then frost as desired.
